Ingredients
- 160g dried spaghetti
- 1tbs vegetable oil
- 150g thick cut bacon lardons
- 1 garlic clove, crushed
- ½tsp chilli flakes
- 1tbs tomato paste
- 200g tin high quality tomato sauce
- Sea salt
- Black pepper
- 30g Parmesan cheese
- Fresh basil leaves
- Bring a large pot of water to the boil and season with sea salt. Add the spaghetti and cook for 8-10 minutes.
- While the spaghetti is cooking, heat a medium-sized pan and add a tablespoon of vegetable oil. Add the bacon lardons and cook for 3-4 minutes until browned, stirring regularly. Add the garlic and chilli flakes and cook for one minute, then add the tomato paste, tomato sauce and a ladle of pasta water, bringing to a simmer and stirring to combine. Season with salt and pepper.
- Strain the spaghetti and add it to the pan, stirring it through and coating it with the sauce. Serve on a plate and finish with grated Parmesan cheese and fresh basil leaves.
