When I’m at home, I crave simple, comforting dishes that are easy to make but taste delicious. I learned this recipe from my best friend’s mother, she always made it for us when we were younger when I’d sleep over at their house. It’s now one of my favourite everyday dishes.
It’s super easy to prepare on the day you want to eat it, or the day before serving it. We would normally serve it with rice mixed with orange zest and chopped parsley, but it also goes well with boiled or roasted potatoes.
Instead of pork, you can substitute chicken, or broccoli and squash for a vegetarian option. You can also add sausages to the dish to make it more meat heavy.
It is a lovely bit of comfort on a cold winter day.
