Roast ham with soy, honey and orange glaze

Ingredients
  • Bone-in skin-on ham, approx. 3.5-4 kg in weight
  • 100g brown sugar
  • 100g honey
  • 80ml soy sauce
  • 1 heaped tbsp cornflour (mixed in equal quantity of cold water)
  • 2 tbsp glace cherries
  • Zest of 1 orange
  • 1 tbsp fresh thyme leaves
  • 1/2 a whole nutmeg, grated
  1. Place the ham on a large baking tray and cover it with a sheet of tinfoil. Place in oven and cook at 200 degrees for three hours.
  2. Take out the ham and let it sit in a warm place for one hour, then carefully peel the skin off, leaving the fat on the ham.
  3. To make the glaze, add the brown sugar, honey and soy sauce to a small pot and heat gently until the brown sugar has dissolved, stirring regularly. Whisk in the cornflour until it has mixed through. Bring to the boil, stirring regularly until the glaze thickens, then remove from heat.
  4. Spoon or brush the glaze over the ham until it is evenly covered. Chop the glace cherries and sprinkle them over the ham, followed by the orange zest, thyme leaves and grated nutmeg. There is no need to return the ham to the oven, just slice and serve.
