My guilty pleasure: Donal Skehan’s mighty fish finger waffle sandwich

"My guilty pleasure is one I'm convinced showed true signs of genius when I came up with it as a child. My friends, I present to you THE MIGHTY FISH FINGER WAFFLE SANDWICH! I haven't made it for a while but just thinking about it makes my mouth water. A fish finger and potato waffle sandwich slathered in Heinz tomato ketchup might not sound like much in theory. But essentially you have the makings of a fish pie, albeit a slightly trashy version. It's not exactly something that can be made for me asI like to make sure it is perfect; the right level of crunchiness on the fish fingers, golden brown colour on thewaffles and just the perfect amount of tangy sweet ketchup. And you do have to make sure the fish fingers are lined up correctly too. It's the perfect childhood memory for me and also my guilty pleasure."
