It seems seaweed can be used in the preparation of any food or drink, writes Nicoline Greer.
It has even been used in the brewing of beer in the Biddy Early Brewery in Ennis, Co Clare. And Maja Binder of Dingle Peninsula Cheese speckles the pale yellow hue of her cheese with hand-picked dark red dillisk seaweed. As for Dr Prannie Rhatigan further up the coast, well, she'll muster up just about anything with seaweed: soups, scones, breads, pastas, pesto and sushi as well as sweet things such as sugar kelp carrot cake, gingerbread men and angel girls. She will be introducing people to the many uses of seaweed later this month in the Organic Centre, Co Leitrim. There will be edible seaweed ideas as well as cosmetic uses for seaweed such as face packs and creams, and a chance to go to the seaweed baths in Strandhill.
