Geraldine Wilkins, of Belfast's Cuisine Express, ran her first Can Xenet cookery school last September, on the island of Majorca, and it proved such a success that this year classes are planned for two separate weeks in April - April 2nd-9th, and 13th-20th - as well as a further week from September 20th to 27th, this last week in conjunction with the Can Xenet school of painting.

Can Xenet is an old manor house in the north-east (the unspoilt bit) of Majorca, which stands on a hill with a view of forests, cornfields, mountains and the bay of Pollenca. The barn in the house even has a wood-burning stove.

Geraldine's plans for the cookery classes are a mix of hands-on activity, demonstrations, talks on Mediterranean cooking and visits to the local markets.

Prices range between £390 and £470 for the week, depending on the accommodation required.
