Seas the Day this Summer with a trip to the west Clare coast to enjoy fantastic seafood and hospitality from the Vaughan family. The Irish Times has teamed up with Vaughan’s Anchor Inn to give one lucky Food and Drink Club reader the chance to win an overnight stay for two by the sea with a three-course dinner in Vaughan’s Anchor Inn in Liscannor, as well as lunch the following day in Vaughan’s on the Prom in nearby Lahinch.

Seas the day this summer and enjoy a trip to the seaside in beautiful West Clare to enjoy the Vaughan family’s hospitality and delicious food, staying in one of the cosy rooms at Vaughan’s Anchor Inn in Liscannor where you can enjoy a three course dinner cooked by James Vaughan and his team (freshly crowned winners of ‘Best Gastropub in Munster’ at the Irish Restaurant Awards) before a great night’s sleep and a cooked to order breakfast the following morning, featuring the freshest, free-range eggs from 10 year old Shane Vaughan’s hens. Spend the day at the seaside in Lahinch and enjoy a two-course lunch with glorious sea views in Vaughan’s on the Prom. Stroll around the corner for some dessert – cow-to-cone ice cream from Spooney’s with tea or coffee. Eat-in or enjoy your ice cream while walking the beach or perched on a rock watching the surfers.

Just over 45 years ago, John and Annette Vaughan opened Vaughan’s Anchor Inn in beautiful Liscannor in west Clare, and their son Denis took over the kitchens, putting it on the map as a seafood destination serving the freshest fish and shellfish landed locally. Denis’s wife, Lisa, married into Clare from Dublin and joined the business, looking after everything from bookings to front-of-house. Then Denis and Lisa’s eldest sons, James and Denis Jr., became the third generation to carry on the family tradition. Chef James has looked after the kitchens in Vaughan’s Anchor Inn since 2021, and younger brother Denis works with his dad in Vaughan’s on the Prom and Spooney’s ice-cream parlour downstairs on the seafront in Lahinch, both of which also opened in 2021. A proudly authentic Irish family food story, working with a larder from the Atlantic and the land that surrounds them, the menus in the Vaughan’s restaurants showcase their great local suppliers.
