Ingredients
- 12 clementines or mandarin oranges
- 250g sugar
- 400ml water
- 6 thin slices of fresh ginger root
- 2 cloves
- 1 stick cinnamon
- 150ml gin (or use brandy/rum)
- You will need two clean, empty 500ml jars.
- Remove the peel and white pith from the citrus. Pack the fruit into sterilised jars.
- Make the spiced syrup by placing the water, sugar, spices and ginger on to a pan and simmering gently for 10 minutes.
- Pour the syrup over the clementines, use half in each jar, then top with the gin.
- Set aside for a week for the flavours to develop before using. These will keep for up to six months in a cool cupboard.
