Are cookery schools the new spas? They are springing up all over Ireland, and next off the block is the Tannery Cookery School, a new addition to Paul Flynn's Tannery Restaurant and Townhouse in Dungarvan, Co Waterford.
The new school, which is to open in the autumn, will be housed in a restored Georgian townhouse that will also have seven bedrooms available to students. Flynn showed himself to be a patient and inspiring teacher when he mentored young hoteliers Michelle McCarthy and Lorraine Cunningham for the RTÉ TV show, The Master's Apprentice. Joining him on the roll call of guest chefs at the new school will be Irish Times food writer and restaurateur Domini Kemp, Richard Corrigan, food writer Tamasin Day-Lewis, and Dennis Cotter of Cork's Cafe Paradiso.
