I WISH I WAS:Kenya's ambassador to Ireland, Catherine Muigai Mwangi, longs for barbecued goat meat, but makes do with grilled chicken.

"Looking out at the breathtaking views of the Rift Valley in Kenya at one of my favourite places, the Olepolos Country Club. It is more than just an eating facility, it is a total experience of delicious barbequed goat meat, breathtaking views, a vibrant crowd and plenty of sun and fresh air. The drive there is awesome. Barbequed goat meat has to be my favourite food. One could eat it alone with no accompaniments, or spice it with kachumbari(salad, African style), ugali(maizemeal) and/or Irio(mashed maize, beans, greens).

Olepolos is located in the Ngong Hills, which is Maasai countryside, and the Maasai are an integral part of the facility. They display their colourful beadwork and entertain guests with their majestic dance and song. As I said, it is an experience."

"So I will not try and replicate my Olepolos in Dublin instead. I will do a simple grilled chicken, marinated with a generous amount of chillies, lots of vegetables including my favourite, broccoli, mashed peas and kale, and a small helping of cheesy potatoes."
