Ingredients
- Serves 42 heads of Cos lettuce
- 100g white miso
- 150g celery – 2-3 stalks, washed and chopped
- 100ml olive oil
- 4 cloves garlic, peeled and roughly chopped
- 1tbsp dijon
- Salt and pepper
Wash and dry the Cos leaves. Make the dressing by putting everything in a blender or food processor and blitzing till smooth. Dress the salad just before serving.
Naturally feel free to add some Parmesan or croutons.
