Recipe: Chicory and goat’s cheese salad

Ingredients

  • Serves 3 as a main, 6 as a starter2 heads of chicory
  • 1 apple, skin on, sliced
  • 100g firm/hard goat’s cheese
  • A few walnuts
  • Dressing100ml olive oil
  • 1 tsp honey
  • 1 tbsp wholegrain mustard
  • 2 tbsp lemon juice
  • Salt and pepper

Leaving the chicory leaves whole, arrange them on a plate and dot over cubes of the cheese and slices of apple.

Make the dressing by whisking the ingredients together in a bowl and seasoning well. Drizzle the dressing over the top of the salad and scatter a few walnuts over the top before serving.
