Ingredients

  • <ul> <li>500g minced turkey meat</li> <li>1 courgette, grated</li> <li>1 bunch spring onions, chopped</li> <li>1 egg, beaten</li> <li>Bunch of mint, chopped</li> <li>Bunch of coriander, chopped</li> <li>2 cloves garlic, crushed</li> <li>1 tsp ground cumin</li> <li>Salt and pepper</li> <li>Good pinch cayenne pepper</li> <li>Olive oil</li> <li>Few tbsp Greek yoghurt</li> <li>Few tbsp relish</li> </ul>

Preheat the oven to 200 degrees/gas 6. Mix all the ingredients together, season well and shape into small patties – about 7cm across and 3cm thick. Place in fridge to chill. Before cooking, drizzle them with olive oil and place them on a parchment-lined baking tray. Bake for 30 minutes until they are starting to brown, turning them over once, about 20 minutes in, to brown both sides. These are lovely served with a yoghurt/relish combo. I used a courgette relish I’d received as a gift, but you could just as easily use tomato relish.
