SNAP DECISION The mark of good chocolate is that it snaps when you break off a piece, says Karola Ó Conaill, who is in the business of making one of life's indulgences.

Ó Conaill Chocolate recently opened on French Church Street in Cork city (left), selling up to 30 kinds of chocolate, as well as hot chocolate and coffee. Karola, originally from Germany, learnt to make chocolate from her chocolatier father. The tradition goes back three generations in her family. Ó Conaill Chocolate is handmade in Carrigaline, Co Cork and available countrywide in delicatessens, heritage centres, airports and chemists - where the company's diabetic chocolate is sold.
