What: This is a host of restored ancient rooms nestled into an extraplanetary terrain created over millions of years by lava and ashes leaping from nearby volcanoes. Many have had a hand in sculpting the landscape, from wind and water to monks and master stonecutters.

There are panoramic views of the Cappadocia plateau and beyond. The hotel is on the site of an ancient monastery in old Uçhisar village and is made up of ancient buildings, caves and tunnels spread over a slope. The building’s restoration has employed much of the rock and stone to bring a natural, earthy but not roughing-it feel.

You can come here for the sheer romance of it all: the ancient land, the earthy luxury, the sunrises and sunsets, rock doves, nightingales, gardens, vineyards, valleys, but you can also get married at the hotel. Think of the wedding pics.

Rooms: Each is in an individual style although a rocky medieval air permeates many. Room styles include standard rooms, deluxe, suites and splendid suites which have two bedrooms (arguing so soon?) and living spaces with a heart-shaped pool. What: In the 1700s, this hotel was the secret meeting place for Gaspard de Besse – a sort of French Robin Hood – and his paramour Dame Rose and, while it can't be the only French hotel that has hosted such liaisons, the fact that the hotel mentions it in its literature shows a certain belief in its powers d'amour. The four-star hotel began life as a staging post and for the past 22 years has held weddings that reach from the country house and its terraces out to the lawns around it.

If you wish to leave this love nest on the French Riviera, then a creek-lined coast is 10 minutes away, and Cannes and Nice are within an hour. You are right beside Fréjus and its Roman ruins and Grasse, the city of perfumes, is nearby, as are plenty of pretty hilltop villages.

Even at the hotel you are encouraged to get in touch with the elements, whether that be breakfast on a terrace overlooking the gardens or by an open fire (or in your room).
