Fool's Guide

The basics for a big bash are pretty much the same as for the smaller-scale operation discussed a fortnight ago. Here's a brief reminder:

Buy one-third white, two thirds red, allowing at least half a bottle per person Buy by the case, on a sale or return basis - and ask for a case discount

Ask your wine merchant to supply glasses, too. (Book them ahead, in this bedlam season.)

Keep the white nicely chilled outside the back door

Have as much water on hand for guests as wine.
