We have all been subjected to overdone vegetables - maybe broccoli that has been boiled to mush, or cabbage that has disintegrated on the plate. The texture and appearance of watery, overboiled veg would be enough to put you off, but there’s another downside too: boiling -particularly boiling for a long time - can reduce the amounts of nutrients in the once-healthy food.
To avoid meltdown, why not try cooking veg in an electric or pot-based steamer? It’s quick, it’s you can steam several types of vegetables (including spuds) at the same time and the food is more likely to be appetising and have retained more nutrients by the time it hits your fork.
