And here is another imaginative way in which to improve your kitchen skills. Geraldine Wilkins, who has most recently been the cook in Belfast's stylish Equinox, runs the clever Cuisine Express classes, which take place in your own kitchen.

Over a course of six weeks, with classes at three hours each, you and your friends, in either your own or a friend's kitchen, will enjoy a course which is tailored to your own needs and interests.

For instance, in the "Cooking without meat or fish" classes, you might want to expand your repertoire of pasta sauces. If you are at the "Introductory Cooking Skills" level, you may dream of carrying off a dinner party with aplomb, or simply wish to vary the TV dinner in your life, says Ms Wilkins.

Numbers are limited to between six and eight people, and all everyone needs is enough room for you and your friends, and basic equipment such as knives and chopping boards. The cost is £75 per participant, and there is a reduction for the person who hosts the classes.
