Irish produce will be showcased at the State dinner with the Queen and Duke of Edinburgh set to be served a meal of salmon, beef, strawberries and mousse.
Some 172 dignitaries have been invited to attend the black-tie event at Dublin Castle, at which the Queen makes her only public address of her four-day visit to Ireland.
The menu includes:
Starter: Cured salmon with Burren smoked salmon cream and lemon balm jelly, horseradish and wild watercress, Kilkenny organic cold pressed rapeseed oil.
Main course: Rib of Slaney Valley Beef, ox cheek and tongue with smoked champ potato and fried spring cabbage, new season broad beans and carrots with pickled and wild garlic leaf.
Dessert: Carrageen set West Cork cream with Meath strawberries, fresh yoghurt mousse and soda bread sugar biscuits, Irish apple balsamic vinegar meringue.

The executive chef is Ross Lewis of Dublin’s Chapter One restaurant, who worked with the Áras to devise the menu.
The President’s spokeswoman said it was drawn up to “reflect the best of Irish produce”.
Guests include British prime minister David Cameron, Taoiseach Enda Kenny, Nobel laureate and poet Seamus Heaney, and Ireland rugby Captain Brian O’Driscoll, who declined an invitation to the royal wedding to prepare for a
Heineken Cup clash between Leinster and Toulouse. His actress wife Amy Huberman, who went to the Royal wedding on her own, is also on the guest list.
Northern Ireland First Minister Peter Robinson has been invited with his wife Iris. It will be her first public appearance since she withdrew from politics in the wake of the scandal surrounding her affair with 19-year-old KirkMcCambley.
