Sir, – Noel Shanaghy (Letters, October 14th) says it’s all in the name, and describes mashed potato and chopped cabbage as colcannon.

I beg to differ.

Sir, – I’m married to a Tipperary man and he calls mashed potatoes pandy. In Ballycastle, Co Mayo, we call ours brusy. – Yours, etc,

Sir, – While training as a chef in a Co Offaly hotel, a senior chef from the locality regularly referred to colcannon or champ as “thump” – a dish of shredded cabbage and scallions gently softened in hot milk and butter, mixed with well-seasoned, coarsely mashed potatoes. – Yours, etc,
