Sir, – Emer McLysaght’s rumination on the advent of the salad leaf rocket on Irish plates (“My leafy research into rocket’s arrival here delivered some traumatic memories”, October 25th) failed to mention the unfortunate corresponding decline of salad cream.
Once the undisputed champion of dressing butter lettuce, salad cream has found itself tragically sidelined as rocket and its continental cousins ushered in the era of balsamic drizzles and vinaigrette. A fate undeserved, I say as a longtime devotee of salad cream sandwiches. – Yours, etc,
