Madam, - I note with interest (The Irish Times, August 7th) that new regulations mean that home bakers who wish to conduct a little business from their homes can now do so. Three cheers for common sense!
In an increasingly litigious society and with the plethora of rules and regulations governing food production, and in the light of food scares and scandals, it is heartening to learn that small-scale food producers can produce food in their own kitchens while being mindful of the standards expected of them.
The stark choice often facing small-scale food producers in the past was to expand or go out of business.
Ireland has the glorious chance now to expand its niche food market and with the reform of the Common Agricultural Policy on the way, this unique opportunity is one that should not be missed. Artisan food producers should celebrate this commonsense approach.
I salute the efforts of Darina Allen and others on this victory for Ireland and niche food. - Yours, etc.,
