Thai-style lamb meatballs

This impressive meatball dish is packed with flavour and can be whipped up in no time

Ingredients

  • 400 g lamb mince
  • 4-6 scallions, finely chopped
  • 1 tbsp coriander leaves, chopped
  • 1 tbsp mint leaves, chopped
  • Grated zest of 1 lime
  • Salt and pepper
  • Lime wedges, to garnish
  • Sweet chilli sauce, to serve

Method

Prep: 15 mins

Pre-heat the oven to Gas Mark 6, 200°C, 400°F.

Place the lamb in a bowl. Add the remaining ingredients except the chilli sauce and mix well.

Roll the mixture into small balls and place them on a baking tray lined with greaseproof paper. Cook in the oven for 12 to 15 mins. Garnish with lime wedges and serve as a hot or cold snack, with sweet chilli sauce.
