Dettori anchored the St Leger winner in sixth place behind Coral Reef, before asking his mount to quicken up approaching the final quarter mile of the 12-furlong event.
Shantou, clearly revelling on the sticky ground, soon had matters under control with the 14 to 10 shot forging three lengths clear of Michael Stoute's Sacrament (Walter Swinburn), with Strategic Choice (Richard Quinn) two and a half lengths further back.
Leap For Joy repeated her 1995 success in the Group Three Premio Omenoni.
Both Ferdie Murphy's Irish Stamp (Norman Williamson) and Charlie Mann's 1995 winner Its A Snip (Richard Dunwoody) ran well to take second and third in the Czech Grand National, the Velka Pardubicka, over a gruelling extended four and a quarter miles.
Victory went too Cipisek, ridden by Vladislav Snitkovskij. The winner triumphed by four and a quarter lengths in the new course record time of 9m 35.1s.
