Ireneusz Jelen squeezed Poland's equaliser under goalkeeper Maik Taylor 17 minutes later before Jonny Evans restored Northern Ireland's advantage early in the second half.
Northern Ireland went 3-1 up in the 61st minute when Poland captain Michal Zewlakow's backpass bobbled under keeper Artur Boruc for an own goal.
Marek Saganowski headed the second goal for the visitors in injury time.
