Conrad Murphy opened the scoring with a UCC point before Alan Dillon levelled.
Clever play by Kerry's Ian Twiss unhinged the Maynooth defence for Sean O'Brien to hammer the ball to the net for a 1-1 to 0-1 lead after six minutes.
UCC kept their shape for the remainder of the half to lead by 1-4 to 0-3 at half-time.
Maynooth failed to score between the fifth and 18th minutes of the second half , when a Kieran Reilly goal got them back into it.
Maynooth finished strongly, however, with points by Paudie Swinburn and Mark Ó Sé.
